Chicken katsu rice bowl with greens

Description:

A simple chicken katsu-style dish we make at home when we want something quick but satisfying. Inspired by Japanese katsu, but adapted using what we usually have in the kitchen.

We serve it with rice and greens and keep it fairly simple, sometimes adding extra sauce depending on what we have.

Steps

  • Cook the rice according to the packet instructions.

  • Flatten the chicken breasts and season with salt and pepper.

  • Cover the chicken in panko breadcrumbs, pressing to coat evenly.

  • Remove the chicken and let it rest briefly before slicing.

  • Serve the sliced chicken over rice with broccoli.
