Steps
Cook the rice according to the packet instructions.

Flatten the chicken breasts and season with salt and pepper.

Coat the chicken in flour, then dip into beaten egg.
Cover the chicken in panko breadcrumbs, pressing to coat evenly.
Remove the chicken and let it rest briefly before slicing.
Serve the sliced chicken over rice with broccoli.
Top with spring onions and any extra sauce if using.
